Brussels Sprout Poriyal
This South Indian spin on brussels sprouts is sure to please people of all ages as every hearty crunch comes with a lot of yum.

Ingredients
- 8 cups brussels sprouts (chopped)
- ¼ cup moong dhal
- 6 green chilies (slit in half)
- 1 tbsp urad dhal
- 1 tsp mustard seeds
- 6 curry leaves
- 2 tsp oil
- salt to taste
Instructions
- Wash moong dhal and soak in water for at least 30 minutes.
- In a pan, add oil. Once hot, add urad dhal and mustard seeds.
- Once mustard seeds crackle, add green chilies, brussels sprouts and curry leaves.
- Add soaked moong dhal and cook for 3-4 minutes. Be careful not to overcook the brussels sprouts.
- Add salt and mix well.
- Serve hot as a side dish with rice.
