Aloo Gobi Masala
Made from potatoes and cauliflower, this side dish has great texture and is sure to become a comfort food along with any rice, roti or naan.

Ingredients
- 2 cups potatoes (cubed)
- 3 cups cauliflower (cut into florets)
- ½ cup tomato puree
- ½ cup onion (chopped)
- 1 tbsp ginger garlic paste
- ½ tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tsp Kashmiri red chili powder
- 1 tbsp coriander powder
- ½ tsp garam masala powder
- 3 tbsp oil
- 1 tsp cumin seeds
- salt to taste
Instructions
- Add oil to a pan. When hot, add cumin seeds.
- When cumin seeds sizzle, add chopped onion and saute for 2-3 minutes.
- Add ginger garlic paste and saute until raw smell fades.
- Next, add turmeric powder, chili powder, Kashmiri red chili powder and coriander powder.
- Saute for 1 minute.
- Add potatoes and mix well. Place lid over pan and cook potatoes for 5-7 minutes or until half cooked.
- Add cauliflower florets and mix.
- Then add tomato puree, garam masala and salt.
- Cook without lid for 5-7 minutes or until the potatoes and cauliflower are fully cooked. Be careful not to over cook the cauliflower florets.
- Serve hot as a side dish for roti, naan or rice.
