Beetroot Keerai Poriyal
A quick way to use any leftover beet greens, this nutritious dish comes with a hearty crunch in every bite.

Ingredients
- 1 beetroot keerai bunch (from about 4-5 beetroots)
- 1 medium onion (chopped)
- 2-3 dried red chilies (adjust to taste)
- 1 tsp mustard seeds
- ½ tsp urad dhal
- 2 tbsp oil
- salt to taste
Instructions
- Chop beet greens and wash thoroughly. Set aside.
- Add oil to a pan. Once hot, add urad dhal, mustard seeds and red chilies.
- When the mustard seeds start to crackle, add chopped onions and saute for 1 minute.
- Add chopped beet greens and saute for 1 minute.
- Add salt to taste and mix well.
- Serve hot.
