Chettinad Cauliflower Poriyal

Cauliflower Poriyal is a simple recipe for anytime you need a vegetable to eat with your meals. Just toss some cauliflower florets in spices and enjoy!

Ingredients

  • 6 cups cauliflower florets
  • ¼ tsp turmeric powder
  • 2 tsp black pepper
  • 2 tsp cumin seeds
  • 2 dry red chilies
  • 10 curry leaves
  • 2 tbsp oil
  • 1 tsp urad dhal
  • ½ tsp mustard seeds
  • salt to taste

Instructions

  • Wash cauliflower florets and set aside.
  • Coarsely grind black pepper and cumin seeds. Set aside.
  • Add oil to a pan. Once hot, add mustard seeds, urad dhal and dry red chilies.
  • When mustard seeds crackle, add cauliflower florets
  • Add tumeric powder and salt to taste. Saute this for 2 minutes.
  • Cover with a lid and cook for 3-4 minutes on low flame.
  • Remove the lid and add 2 tsp of the freshly ground powder. Add more if needed.
  • Then, add curry leaves and mix well.
  • Cook on high flame for 3-4 minutes.
  • Once cooked, remove from heat and set aside. Do not over cook the cauliflower.
  • Serve hot with rice and any curry of your choice.
