Chettinad Cauliflower Poriyal
Cauliflower Poriyal is a simple recipe for anytime you need a vegetable to eat with your meals. Just toss some cauliflower florets in spices and enjoy!

Ingredients
- 6 cups cauliflower florets
- ¼ tsp turmeric powder
- 2 tsp black pepper
- 2 tsp cumin seeds
- 2 dry red chilies
- 10 curry leaves
- 2 tbsp oil
- 1 tsp urad dhal
- ½ tsp mustard seeds
- salt to taste
Instructions
- Wash cauliflower florets and set aside.
- Coarsely grind black pepper and cumin seeds. Set aside.
- Add oil to a pan. Once hot, add mustard seeds, urad dhal and dry red chilies.
- When mustard seeds crackle, add cauliflower florets
- Add tumeric powder and salt to taste. Saute this for 2 minutes.
- Cover with a lid and cook for 3-4 minutes on low flame.
- Remove the lid and add 2 tsp of the freshly ground powder. Add more if needed.
- Then, add curry leaves and mix well.
- Cook on high flame for 3-4 minutes.
- Once cooked, remove from heat and set aside. Do not over cook the cauliflower.
- Serve hot with rice and any curry of your choice.
