Coconut Rice
This Indian-style quick dish is meant for the coconut lovers out there. It's great flavor mixed with crunchy cashews will surely keep you coming back for more.

Ingredients
- 1½ cup rice ( I used Seeraga Samba rice but Basmati rice also works well)
- 3 cups water
- 1 cup grated coconut
- 4 green chilies (adjust to taste)
- 2 tbsp cashews
- 1 tbsp channa dhal
- 1 tsp urad dhal
- 1 tsp mustard seeds
- 6 curry leaves
- 2 tbsp oil
- salt to taste
Instructions
- Wash rice and add to pressure cooker. Add 3 cups of water and salt to taste.
- Cook for one whistle and let pressure release naturally. Set aside and cool to room temperature.
- In a pan, add oil. When hot, add mustard seeds, urad dhal, channa dhal, cashews, green chilies and curry leaves.
- Saute until cashews turn golden brown.
- When mustard seeds crackle add grated coconut and saute for 2 minutes.
- Add cooked rice and mix thoroughly.
- Serve hot and with curry of your choice. It tastes great on its own too.
