Mixed Vegetable Pirattal

Ingredients
- 1 cup onion (chopped)
- 1 cup tomato (chopped)
- 6 garlic cloves
- 2 cup potato (cubed)
- ½ cup carrot (cubed)
- ½ cup peas
- 2 cup cauliflower (cut into florets)
- ¼ tsp turmeric powder
- 2 tsp coriander powder
- 2 tsp masala powder
- ½ tsp chili powder (optional)
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- ¼ tsp black pepper
- 2 tbsp oil
- salt to taste
Instructions
- Heat oil in a pan. Once hot, cumin seeds, fennel seeds and black pepper.
- Once cumin seeds brown, add onions and garlic. Saute for 2-3 minutes. The raw smell should fade.
- Add carrots and peas and saute for 3-4 minutes. Then add tomatoes.
- Once the tomatoes are soft, add turmeric powder, coriander powder and masala powder. Saute for 1 minute.
- Add potatoes and salt. Mix well.
- Cover with a lid and cook for 5 minutes on medium flame. The vegetables should be half cooked.
- Then, add cauliflower florets and mix well. Cook until all vegetables are well done.
- Serve hot as a side dish.
