Shrimp Fried Rice
This tasty fried rice is full of fresh flavors and tender shrimp. It's sure to become a family favorite.

Ingredients
- 15 pieces medium shrimp (peeled and deveined)
- 1 cup frozen mixed vegetables
- 1½ tbsp soy sauce
- 1½ tbsp stir-fry sauce
- 1½ tbsp red chili paste (adjust to taste)
- 1 tsp sugar
- 1 tsp white pepper
- 2 tbsp sesame oil
- 1½ cup Basmati rice
- 2 cups water
- 1 tbsp vegetable oil
- salt to taste
- 10 fresh basil leaves
Instructions
- Wash rice and add to Instant Pot.
- Add water, vegetable oil and salt.
- Pressure cook on high for 5 minutes. Once done, keep warm for 5 minutes.
- Quick release pressure and transfer to a wide tray. Use a fork to remove lumps, if any, and let rice cool.
- In a wok, add sesame oil. Once hot, add shrimp and saute for 1 minute.
- Add onion and garlic and saute for 2 minutes.
- Add mixed vegetables and saute for 2-3 minutes.
- Combine soy sauce, stir-fry sauce, chili paste and sugar in a small bowl. Add to the shrimp and vegetables.
- Add cooked rice and mix well. Cook for 2-3 minutes.
- Add salt to taste and white pepper. Garnish with fresh basil leaves and serve hot.
Notes
- The rice can be prepared a day ahead of time or leftover rice can also be used.
- If using pressure cooker, Rice: Water is 1 ½ : 2 ½. Add vegetable oil and salt to taste to the rice. Cook for one whistle and release pressure naturally. Let rice cool to room temperature.
- Smaller shrimp also work well for this recipe.
