Poori Potato Masala
Made with mashed potatoes and spices, this Potato Masala will surely make you enjoy every bite of your poori.

Ingredients
- 6 medium potatoes
- 2 medium onions (thinly sliced)
- 1 tomato (finely chopped)
- 8 green chilies (slit lengthwise) (adjust to taste)
- ½ tsp chili powder (adjust to taste)
- 1 tsp grated ginger (optional)
- ¼ tsp turmeric powder
- 10 curry leaves
- 1 tsp mustard seeds
- 1 tsp urad dhal
- 1 tbsp channa dhal
- 3 cups water (for cooking potatoes)
- 3 tbsp oil
- salt to taste
Instructions
- Wash potatoes and cut into quarters.
- Add potatoes to pressure cooker. Pour water and cook for 1 whistle. Let the pressure release naturally.
- Once cooked, peel the skin from the potatoes and set aside.
- Add oil to a pan. Once hot, add mustard seeds, urad dhal and channa dhal.
- Once mustard seeds crackle, add onions, green chilies and ginger (if using).
- Saute for 2-3 minutes. The raw smell should fade.
- Add turmeric powder and curry leaves. Saute for 1 minute.
- Next, add tomatoes and saute for 1 minute.
- Then, add potatoes and mash them with a masher. Add salt and chili powder.
- Cook for 3-4 minutes.
- Serve hot with poori.
