This crunchy Purple Cabbage Poriyal will surely make your meal tastier, healthier and colorful. Serve with rice and any curry of your choice.

Ingredients
- 6 cups purple cabbage (shredded)
- ¼ cup moong dhal
- 1 tbsp oil
- ½ tsp mustard seeds
- 1 tsp urad dhal
- 3 green chilies
- 10 curry leaves
- salt to taste
Instructions
- Wash moong dhal and soak for 30 minutes.
- Add oil to a pan. Once hot, add urad dhal and mustard seeds.
- Once mustard seeds crackle, add curry leaves.
- Then, add shredded cabbage. Saute for 1 minute.
- Add soaked moong dhal, green chillies and salt to taste.
- Cook for 2-3 minutes. Make sure to keep the cabbage crunchy.
- Serve hot with rice and curry.
